Looking for some shape and movement in those flat, fatty slices of bacon you need to use on a luscious BLT sandwich or deluxe burger? Just the right wire cooling rack was once the tool of choice--but what if you forgot to bring your favorite rack? Or the studio kitchen doesn't have any? Good old all-purpose aluminum foil can come to the rescue. Pull off sheets of foil and roll them into 1/2-inch diameter "pencils". Space them evenly (about 1 to 1-1/2 inches apart) in a row on a rimmed baking sheet, then lay slices of bacon over them. Pushing the bacon down a bit between the rolls of foil. Bake in a 375˚ F oven, keeping an eye on it, until desired crispness. The slices will have nice curls and shape that will help you style them more easily. If the browning of the bacon fat isn't quite what you want, brush a little Angostura Bitters (an reddish-orange liquid used to make cocktails--look for it in the drink ingredient part of the grocery or at a liquor store) strategically onto the fattier parts of the slices.
