Never-wilt Chiffonade of Greens |

Need lots of crisp shredded iceburg lettuce for fast food tacos, burgers, or sub sandwiches? Plan ahead... rinse the heads of lettuce in cool water. Cut out the core of the lettuce head and remove the larger green leaves. Tear out the center of the leaves so they stack evenly. Layer two large leaves, then roll up like a cigar. Wrap in a damp paper towel; place in a sealed plastic bag. If possible, refrigerate for at least a few hours or overnight. This will crisp up the lettuce and give the leaves some natural "curl". Thinly slice across the rolls with a sharp knife (French chiffonade) to shred.
