After a challenging shoot for a supermarket circular recently, we got this great tip for handling large deli trays of cheese and meats. Often shots that include these kind of items are populated by lots of other food, so it's hard to keep everything looking good. If you must leave arranged trays out on the set longer than you'd like (or if you have to wait for final approvals on shots by marketing types not on site...), drape them with dampened cheesecloth. Spritz the cheesecloth very lightly with water ever so often, if needed. It's amazing how long this will extend the set life of such perishable foods.
