Having a great little butane torch in your kit can come in handy. A small flame can brown fat on the edge of a steak, create charring on rib bones, or tighten the skin on roast poultry. We love the culinary mini torches sold for making creme brûlée, but have also used pencil soldering torches (that often give you the choice of a small heat element, great for melting butter, or a flame) or butane soldering torches from tool supply places. These torches tend to be heavier duty and withstand splattering fat better than culinary torches. One favorite source is Snap On Tools...search their online catalog for soldering tools.
