Need to pour the perfect mug of beer, with just the right amount of foaming head? The key to a great pour is so basic, it's easy to overlook: sparkling clean glassware. Wash the glassware with ultra-hot soapy water (if you can get specially formulated bar soap, all the better). Allow the glasses to drip dry (avoid wiping the inside with paper or fabric dish towels--you'll leave small fibers on the surface). Use a hair dryer to finish the drying if needed. Handle the glasses with cotton gloves to avoid fingerprints, then prepare the glasses for condensation on the outside (if required). Using room temperature beer, start pouring...and pouring...and pouring. Next time: how to control the foam.
