Some urban legends about enhancing food are just not true. Need bright green broccoli? Forget adding baking soda to the water; just be sure to keep the cooking time under seven minutes (the point at which the chlorophyll in green vegetables turns drab). Want to caramelize some onions? No need to add any sugar; the natural sugars in onions will brown when slowly cooked in a skillet.
